No Bake Flax Seed Almond Oat Energy Bars



Ingredients: 
1/2 cup almond butter
1/4 cup golden flaxseed meal
1/4 cup honey
1 TSBP vegetable oil
1 cup ground oatmeal (flour-like consistency)
1/4 cup vanilla whey protein powder 


In a small bowl mix together almond butter and golden flaxseed meal. In another bowl, mix honey, protein powder, and vegetable oil. Add almond butter/flax mixture to other ingredients. Press into a greased 7x11 pan and refrigerate.  Cut into bars and wrap individually if you are going to eat these on the go.


I did not really follow the original recipe below but I had to start with something in regards to proportions!
They are DELICIOUS.

Granola Bars

My friend Connie gave me a Penzey's spices cookbook and I found the recipe in there.  Note my changes in parenthesis.

Ingredients
2 cups old fashioned oats, uncooked(duh)
1 cup any flour (I used brown rice flour)
2/3 cup dried fruit (I used raisins)
1/2 cup nuts (I used pumpkin seeds 'cause that's all I had)
3/4 cup light brown sugar (I used 1/2 cup light brown, and 1/4 cup sucralose.)
3/4 cup ground flax seed
1/4 cup whole flax seed(I added this.)
1 tsp. cinnamon
1/2 tsp salt
1/4 cup  vegetable oil
1/2 cup honey
2 tsp pure vanilla extract
 1 large egg

Directions
Preheat oven to 350 degrees
Grease a 9x13 pan.
Mix together oats, flour, dried fruit, nuts brown sugar,w heat germ, flaxseed, cinnamon and salt.  Combine well.  Stir in oil, honey and egg.
Pat into the pan using a damp hand.
Bake at 350 degrees for 25-30 minutes or until edges are golden.
Let cool. Cut and eat.
Makes 12,18, or 24 servings depending on how big you cut them!

Note:  I deleted 1/2 cup toasted wheat germ because I don't eat wheat.
