Super Easy Tofu Breakfast Scramble

Ingredients

8 ounces extra-firm tofu crumbled
2 medium sized potatoes, your choice. (Yukon gold is a good choice.  Holds shape better.)
1/4 tsp. sea salt
2 tsp. ground turmeric
2 cups fresh spinach
optional - soft corn tortillas

Directions 
In a bowl, crumble the tofu by hand or with a fork .
Microwave the potatoes until done.  10 minutes?  Check periodically with a fork.  Try 2 minute intervals.
Cut the potatoes up into cubes.(You could also cook the potatoes in a stir fry pan adding a little water.)
Combine the potatoes and the tofu in a stir fry pan.
Stir in sea salt and turmeric.  Cook for about 3-4 minutes on medium heat.  Stirring to avoid burning.
Add spinach and stir until spinach is wilted.  About a minute.
Serve on a plate or place approx. 1/4 cup inside a tortilla and eat like a breakfast taco.
Garnish with fresh slices of oranges.
Yum!

My Kind of Muesli

 
     If you look up muesli on the internet or in a cookbook you will find out that you soak it overnight in milk.  This doesn't really appeal to me but the ingredients do. Years ago a friend of mine turned me on to muesli and she just poured almond milk over it, added fresh fruit and ate it up!  I like to eat it with cold rice milk in the summer.  Sometimes I also use kefir which is like a yogurt smoothie already made. I've also used plain yogurt when I'm feeling like I need a thicker breakfast and then it's more like a parfait!  My husband likes to add water to his, put it in the microwave for 2 minutes and then add the rice milk and sliced bananas.  There are so many variations.  Come up with your own favorite way!  I like to premix mine so it's handy and then I don't have to go through the hassle of making it everyday. This recipe makes a big tub of it!  I like to mix it in a paper bag and then fill up the big container and put the rest back in the oatmeal container for when I run out.

Basic ingredients
1 container old fashioned oats
2 cups raisins (Any dried fruit will do. How about using more than one?  Cranberries, apricots, dates, etc.)
1/2 cup ground flax seed
2 cups chopped walnuts (Any kind of nuts will do, you can even mix them up!  Try almonds or pecans.)

rice milk or almond milk or regular milk
fresh fruit

Directions
Pour all ingredients in a large bag or tub.
Shake until all ingredients are evenly mixed.  
Pour into large tub with a lid.

When it's time to eat just scoop out the amount that you want.
Eat hot or cold.
Add water, milk, almond milk, rice milk, kefir, yogurt, etc.
Add strawberries, bananas, blueberries, raspberrries, etc.

Soy Chorizo Breakfast Burritos

These burritos can be as simple as you would like them to be. Using the tofu increases the amount of protein consumed for breakfast and decreases the amount of cholesterol instead of using eggs.

6 oz - 1/2 of a Soy Chorizo Sausage from Trader Joes (If you can't get that you can use regular pork chorizo)
1 pkg tofu.  Use soft if you want the appearance of soft scrambled, firm if you want hard scrambled.
1 pkg 8 count burrito size tortillas

shredded cheddar cheese (optional)
plain yogurt(optional)
chili powder(optional)
cooked brown rice(optional)
fresh spinach (optional)
fresh fruit

Makes about 6 burritos

1.  Put the chorizo and tofu in a skillet and cook until warm.  You will have to break up the tofu into pieces.  You can do this beforehand as well.  Mix the tofu and chorizo together until it is blended well.
2.  Spoon tofu/chorizo mixture onto tortilla.
3.  Sprinkle some cheddar cheese over the mixture.
4.  Add a couple of spoonfuls of brown rice if you want.  (I forgot this part in the pictures!)
5.  Add a spoonful of plain yogurt if you want.
6.  Add a couple of leaves of spinach for a serving of vegetables.
7.  Wrap up and sprinkle with chili powder.
8.  Serve with chips and a fruit to cool the spiciness of the chorizo.  Enjoy!
