Borracho Beans


Borracho means drunken and refers to dishes which have been cooked with beer or liquor.  This dish calls for stale or flat beer.  For extra flavor you can use wheat or other flavored beer.

Ingredients
1T. canola oil
1 med. yellow onion, chopped, 1 cup
1 medium red bell pepper, seeded and diced
15 ounce can pinto beans, rinsed and drained
15 ounce can red kidney beans, rinsed and drained
2 large cloves garlic, minced
1/2 cup stale beer
1 tsp cumin
1/2 tsp. freshly ground black pepper
1/4 cup chopped fresh cilantro

Directions
In saucepan heat oil over medium heat.
Add onion, pepper, garlic and stir until they begin to soften. About 5 min.
Add beans,beer and dried seasonings.
Cook over med. low heat stirring  often for 8-10 minutes.

Remove from heat and stir in cilantro.
