Ingredients
1 prickly pear cactus pad or 1/2 cup from a jar or can
1/2 cup salsa - spiciness level up to you
6 ounces chorizo-soy or pork
1 tsp. chili powder or mexican type seasoning
1 large avocado
2 T. chopped cilantro
Directions
- Wash prickly pear if using fresh.
- Cut off spines
- Chop cactus into small pieces
- Place cactus in frying pan.
- Add seasoning.
- Saute until tender
- Mix chorizo in with sauteed cactus
- Cook until well heated or cooked through if using pork chorizo
- Mash avocado in a bowl
- Chop cilantro.
- Add the ingredients to the avocado: chorizo, cactus, cilantro, and salsa
- Place pit of avocado in gauacamole if not eating right away.
- Garnish with cilanto sprig.
