I added chopped cilantro and a dollop of plain yogurt on top.   Otherwise no changes.  Delicious!

Yummy Hummus



Ingredients
1 onion chopped
2 15 ounce can chick peas/garbanzo beans
1 T. cumin powder
1 tsp. dried basil
1 tsp dried oregano
1 tsp. sea salt
¼ cup lemon juice
1 T. dried parsley
1 tsp. red pepper flakes

Directions
Saute onions in 2 T. olive oil until soft or transparent looking.  
Let onions cool before adding to other ingredients. 
While the onions are cooking drain and rinse the chickpeas.  
Put the rest of the ingredients in the blender.  
Add onions and add water if too thick.  
It should be the consistency of thick frosting.  
Sprinkle a few red pepper flakes on top. 
Serve with tortilla chips, pita chips, fresh pitas, carrots, celery...whatever you want. We like to use it as a spread when making a wrap.

Strawberry Shortcake Delight


Ok, I'm not going to beat around the bush.  I never promised you a rose garden.  No wait, I mean I never promised you gourmet recipes!  It's strawberry season and you get what you get and you don't throw a fit! No, seriously, I hope that you have as much fun with these recipes as I've had.  Making them, serving them, and eating them!  Oh, yeah, and sharing them!  P.S.  My husband Tim named this one!

What you will need:
Jiffy yellow cake mix - which means you will need an egg
muffin pan
non-stick cooking spray
strawberries
whipcream   (I like Cool Whip because it's non-dairy)
chocolate chips - milk chocolate or semi-sweet (your preference)

Directions
1.  Make yellow cake mix cupcakes according to directions
2.  Let cool
3. Mash strawberries.
4.  Spoon strawberries over cupcake.
5.  Add a dollop of whip cream
6.  Sprinkle chocolate chips around the dessert.
7. Eat it up!

Strawberry Perfect

This recipe is so easy, you can't mess it up.  It's perfect!

Ingredients per person
1/4 cup plain yogurt (We like greek yogurt.  More protein.)
1/4 cup strawberries
1 graham cracker broken into fourths

Directions
Find a pretty bowl and put the yogurt at the bottom.
Slice up your strawberries and place on top of the yogurt.
Stick the four pieces of graham cracker into the yogurt.
Use the graham crackers as a spoon and scoop up the yogurt and strawberries.
Yum!
A great snack for kids to make.

Soy Chorizo Breakfast Burritos

These burritos can be as simple as you would like them to be. Using the tofu increases the amount of protein consumed for breakfast and decreases the amount of cholesterol instead of using eggs.

6 oz - 1/2 of a Soy Chorizo Sausage from Trader Joes (If you can't get that you can use regular pork chorizo)
1 pkg tofu.  Use soft if you want the appearance of soft scrambled, firm if you want hard scrambled.
1 pkg 8 count burrito size tortillas

shredded cheddar cheese (optional)
plain yogurt(optional)
chili powder(optional)
cooked brown rice(optional)
fresh spinach (optional)
fresh fruit

Makes about 6 burritos

1.  Put the chorizo and tofu in a skillet and cook until warm.  You will have to break up the tofu into pieces.  You can do this beforehand as well.  Mix the tofu and chorizo together until it is blended well.
2.  Spoon tofu/chorizo mixture onto tortilla.
3.  Sprinkle some cheddar cheese over the mixture.
4.  Add a couple of spoonfuls of brown rice if you want.  (I forgot this part in the pictures!)
5.  Add a spoonful of plain yogurt if you want.
6.  Add a couple of leaves of spinach for a serving of vegetables.
7.  Wrap up and sprinkle with chili powder.
8.  Serve with chips and a fruit to cool the spiciness of the chorizo.  Enjoy!
